Three-ingredient homemade wraps

Inquiring minds want to know how on earth bread manufacturers need 15 plus ingredients to make a tortilla wrap, when you and I can make our own wrap in less than five minutes, from beginning to end, with only three ingredients.
Don’t kid yourself. Typical supermarket wraps are far from healthy, no matter how many sprouts and microgreens you cram in there.
Here’s the ingredient list of a popular brand of whole wheat tortilla:
Whole grain whole wheat flour including the germ, water, vegetable oil (canola or soybean), baking powder, salt, potassium sorbate, sugars (sugar, fancy and/or blackstrap molasses), hydrogenated cottonseed oil, cornstarch, sodium propionate, carboxymethyl cellulose (cellulose gum), maltodextrin, carrageenan, fumaric acid.
Here’s how you can make your own wrap in a matter of minutes.
Adjust the recipe to the quantity of wraps you need. I often just whip up one quick wrap for myself, rather than make a huge quantity.
- Spelt wraps (Makes 2 large wraps)
- 1 cup spelt flour
- ¼ tsp Himalayan, or Celtic salt
- ¼ cup + 1-2 tbsp water
Measure spelt flour and salt into a bowl. Mix. Add water and mix well. You should be able to form a slightly sticky ball with the dough. If it’s too dry, add a touch more water. Divide the dough ball in half. Roll one half out onto a lightly floured board, to about 7-8-inch diameter.
I like to use a cast iron pan to fry the wraps. Heat the pan on medium high for about 5 minutes. You can start heating it up while you mix the dough if you are in a hurry. Drizzle or brush about ½ tsp olive oil onto the pan. Just enough to coat lightly. Add the wrap to the pan. Fry for about a minute or two, until the dough bubbles a bit on top, then flip and fry the other side. Remove from pan, and let cool on a plate.
