Crispy rice candy bar

If you’re a fan of Nestle crunch bars, you’ll appreciate a healthy twist on this candy bar. You can make it in a matter of minutes, and it’s not only yummy, but wholesome goodness for your brain and body. It can even pass as a breakfast bar.

Feel free to add extra goodness into these bars, like chia seeds or maca powder to power them up for an extra health boost.

Crispy rice candy bar

  • ½ cup coconut oil
  • ¼ cup cocoa powder or carob powder (for a zero caffeine bar)
  • ¼ cup maple syrup
  • 1 cup organic crisp rice cereal

Toast crisp rice cereal in a toaster oven, or oven, for a couple of minutes to make the rice cereal crispy. If using toaster oven just set it on the toast setting and test for crispiness after a couple of minutes.

Remove from oven. Melt the coconut oil. In a bowl combine the coconut oil, cocoa powder and maple syrup. Stir in crisp rice cereal.

Line a small pan with parchment paper. Spread the mixture onto the pan. Place in refrigerator to harden. Then cut into squares and store in a sealed container in the refrigerator.
