Chocolate blueberry clusters

These sweet blueberry cluster treats are reminiscent of Brookside blueberry acai chocolates, without the refined sugars, polyglycerol polyricinoleate, malic acid and maltodextrin. They make a perfect summertime guilt-free treat that gives a burst of flavour, with a dose of heart-healthy coconut oil and antioxidant-rich cocoa.

They were created by chance, when I made a chocolate dip for pineapple and realized it was a touch too thick, and a friend said, “let’s put blueberries in there.” And, presto, blueberry clusters were birthed!

Chocolate blueberry clusters (makes about 16 clusters)

  • Approximately 1 cup of fresh blueberries
  • ¼ cup coconut oil
  • 4 heaping tbsp cocoa powder, or raw cacao
  • 2 tbsp raw honey
  • 1 tbsp coconut sugar

Heat coconut oil in a small bowl in a toaster oven, or in a small pot on the stove just enough to melt the oil. Add remaining ingredients and stir well. As it begins to cool it will thicken, or to hasten thickening place in fridge for a few minutes. Ideally, it should be just thick enough that the chocolate sticks to the berries, and doesn’t drip off. Pour about a quarter of a cup of blueberries into the chocolate and gently mix to coat the berries, then scoop out with a spoon, or use your clean hands if it’s too thick. Place on a parchment paper-covered plate or cookie sheet. Repeat to use the remaining berries.

Place into fridge to harden. Once they have hardened, then place into a covered container and store in the fridge for up to three or four days. You can also freeze the clusters, and let them thaw for about 10 minutes before serving.
