Wholesome fibre-rich truffles

These little truffle bites are jammed with all things healthy, making them a perfect holiday treat for those who want to stay on track with holistic eating this season.  Packed with healthy fats that promote satiety, they make a great mid-day snack at the office, plus they’re nut free so they’re lunchbox friendly at school.

Wholesome fibre-rich truffles

Makes about 12 bite size truffles

Ingredients

  • ½ cup pitted dates
  • ¼ cup of sunflower seed butter (or use nut butter)
  • 4 tbsp ground flax seeds
  • 4 tbsp hemp seeds
  • 4 tbsp cocoa powder or raw cacao powder
  • 2 tbsp maple syrup
  • 1 tsp vanilla

Chop dates in half. This ensures there is no pit – even pitted dates sometimes have a pit, which will ruin your batch. Place the dates in a food processor for about 30 seconds. Add the remaining ingredients and blend well. Roll into bite size balls. If desired, roll the truffles in shredded coconut or dust with cocoa powder.
