Melt-in-your-mouth pumpkin puree truffles

Biting into one of these truffles you would never guess its main ingredient is a fruiting veggie that is stacked with vitamin A, C, potassium and fibre.

I was trying to come up with new ways to eat pumpkin, which is a staple food in my house from fall straight through till summer. I roasted my weekly pumpkin for my pumpkin soup, and set aside enough to make some pumpkin puree to experiment with, and these truffles are the result.

These truffles store well in the fridge or freezer for a quick curb-the-sugar-craving snack or as a last-minute dinner party dessert.

Pumpkin puree truffles (makes about 20 small truffles)

  • ¼ cup coconut oil, melted
  • ½ cup pumpkin puree, room temperature
  • 3 heaping tbsp cocoa powder or raw cacao
  • 1 heaping tbsp raw honey
  • About 1/8 cup chopped dark chocolate or 5 squares (I use 85% dark chocolate)

Melt coconut oil with dark chocolate in small pot. Heat only enough to melt it. Add the remaining ingredients and mix well. If you are using homemade pumpkin puree, be sure to puree it until smooth, or you will have chunks of pumpkin in your truffles, which is okay too! Then you can either scoop a little bit of the truffle mixture into a tray with small silicone cups, or use mini muffin paper liners and scoop the mixture in there, or, just spoon a little bit into a small blob onto a parchment paper covered tray. I tried all three methods, and they all work well.

Place the truffles into the fridge to set for at least 30 minutes to one hour. Remove the truffles and place into a container with a lid. Store in fridge or freezer.

PS. Even straight from the freezer these little morsels are like melt-in-your-mouth candy.
