Creamy 10-minute avocado pasta

If you’re a fan of creamy pasta, but have decided to steer clear of alfredo sauce, and other pasta dishes that are laden with an insane amount of saturated fat and highly inflammatory ingredients, then this palate pleaser is for you. Made with heart-healthy avocados, this super simple recipe can be whipped up in a matter of minutes. Remember to steer clear of white or whole wheat pasta, again highly inflammatory. Look for other options like brown rice, quinoa, spelt or Kamut pasta.

PS. Leftovers reheat well, or even taste yummy cold, making it an ideal lunchbox option.

Creamy 10-minute avocado pasta (2 large servings)

  • 1 avocado
  • ¼ cup fresh, chopped basil, or 1-2 tbsp dried garden basil
  • 2-3 cloves garlic, minced or grated
  • 1/8 cup olive oil
  • 3 tbsp lemon juice
  • ½ tsp salt
  • 2 tbsp nutritional yeast (optional) *
  • About 250 grams of dry brown rice pasta – or 3 cups dry pasta (I like penne or fusilli, but anything goes)
  • Optional: add vegetables like chopped cherry tomatoes and zucchini on top of the pasta once you’ve blended the sauce in.

Boil pasta according to package directions. While pasta is cooking, prepare the sauce. Place all ingredients in a food processor and process until creamy. Strain the pasta once it is cooked, and pour it into a bowl. Then use a spatula to scoop the sauce into the pasta bowl and blend well. Serve immediately. Refrigerate leftovers in a covered container.

*If you prefer a cheesy flavour, include the nutritional yeast, or you can increase the quantity of nutritional yeast for a healthy boost of B vitamins. Add a bit of extra olive oil to desired consistency if adding more nutritional yeast.
