The 3-ingredient cookie

I can’t think of an easier, more versatile cookie recipe than this one. It literally is made with three ingredients, it’s vegan, gluten-free, and healthy enough you’ll want to serve it to your kids for breakfast.
Plus, you can switch it up a bit each time you bake them, if you get tired of the same old cookie.
Cookie base:
- ¼ cup nut butter or sunflower seed butter
- ½ cup almonds ground into a flour
- 2 tbsp maple syrup
Preheat oven to 350 degrees F.
Simply combine all ingredients and roll dough into about 8 balls. Place on a cookie sheet and flatten with a fork. Bake for about 8-10 minutes.
Cookie options:
Peanut butter cookies are made simply with peanut butter, ground almonds and maple syrup.
Add chocolate chips to make a chocolate chip cookie.
Add raisins, cranberries, pumpkin seeds, chopped dates, etc. to make a breakfast cookie.
