Bone broth soup

I can’t think of an easier soup to make than this bone broth soup. It’s wonderfully nourishing for the upcoming winter months. Make a big batch and freeze it for a quick and easy meal, or try a bone broth soup cleanse for a few days, giving your body a bit of a break by simply nourishing it with an easy-to-digest, nutrient-dense soup.
Make a batch of homemade bone broth with either beef bones or chicken (I like to use chicken feet because they are rich in collagen). Here’s a past article on bone broth and how to make it. Freeze batches for later use.
Beef bone broth soup
- 4 cups of beef bone broth
- 1 large onion, chopped
- 2 large potatoes, chopped
- 2 large carrots, chopped
- 1 cup rutabaga, chopped
- 1 cup squash, chopped
- 1 tsp of Himalayan salt or pure sea salt
- 1 tsp dried thyme
- 6-8 whole allspice
- 2-3 bay leaves
Place all ingredients into a pot. Bring to a boil, then lower heat and simmer for about 30 minutes, or until all veggies are cooked. The thyme, bay leaf and allspice not just add flavour to your soup, but extra medicinal qualities. Omit these seasonings if you do not have them. This soup freezes well.
You can also try different vegetables, like leeks, cabbage or pumpkin in your soup.
Chicken bone broth soup
- 4 cups of chicken bone broth
- 1 large onion, chopped
- 2 large carrots, chopped
- 1 cup rutabaga, chopped
- 1 cup squash, chopped
- 1 tsp Himalayan salt or pure sea salt
- 2-3 bay leaves
- 1 tsp dried thyme
Place all ingredients into a pot. Bring to a boil, then lower heat and simmer for about 30 minutes, or until all veggies are cooked. This soup freezes well. You can also add cut, cooked brown rice noodles to turn it into a chicken noodle soup.
