The 1-minute superfood soup

About 25 years ago, you would have likely found me crunching on rice cakes for lunch, working to deadline in my former life in media, then hours later inevitably yawning endlessly at my desk. I even produced a napnomics newsletter just for kicks once. The publisher was not impressed. Wish someone would have told me about miracle miso soup back then.

Miso, a Japanese food made with fermented soy bean paste and other ingredients like brown rice, is not only chock full of nutrients like vitamin B2, vitamin K, protein, iron, calcium, potassium and lecithin, but it also provides a source of healthy fats to help lower levels of LDL – bad cholesterol. What’s more, as a fermented food it aids in boosting the immune system by increasing healthy gut bacteria as a natural probiotic, and serves as a potent antioxidant, eliminating free radicals from the body.

One of the simplest ways to enjoy miso, found in health food stores, is by adding it to a cup of boiled water. Drinking it just like that for a quick pick me up. You can also soup it up by adding a few simple ingredients. Cook rice, then freeze it into portions in baggies for later use. Keep in refrigerator, thawed, for a few days, and add it cold to your miso cup of soup.

Superfood cup of soup

  • 1 tbsp organic miso
  • ½ clove grated garlic
  • ¼ inch piece grated ginger
  • Dash of cayenne
  • ¼ to ½ cup cooked rice
  • Chopped chives

Mix all ingredients except rice in a mug. Pour boiling water into cup and stir well, then add rice and enjoy.
