Pumped up potatoes

Take ordinary mashed potatoes to a new level. Here’s a simple way to pump up the nutrition in a side of mashed potatoes, even though you have finicky eaters in your family.

Pumped up potatoes

  • 3 large potatoes quartered (or try half white potatoes with half sweet potatoes)
  • Himalayan salt to taste
  • 3 tbsp olive oil
  • ½ cup cooked white beans
  • ¼ cup nutritional yeast
  • Optional: mix it up and make a mash combining white potato, sweet potato, rutabaga and squash, or any of these vegetables, instead of just white potato.

Boil potatoes till soft (leave skin on if using organic potatoes). Meanwhile, mash white beans completely. Drain water from potatoes once cooked, reserving about 1 cup potato water for adding while mashing potatoes. Mash potatoes, adding potato water while mashing, to desired consistency. Add olive oil, beans, salt and nutritional yeast. Mash till mixed well and serve.
