Wholesome grain-free, sugar-free muffins

This recipe for banana loaf or muffins contains no added sugar or gluten. The sweetness comes from the bananas. Explore different muffin varieties by adding fruits, nuts or raisins, with a touch of cinnamon.
- 4 eggs
- 2 1/2 cups mashed bananas
- 1/2 cup of nut butter or sunflower seed butter
- 4 tbsp melted coconut oil
- 1/2 cup coconut flour
- 1 tsp baking soda
- 1 tsp baking powder
- blueberries, apple chunks, raisins or dates or other fruit
Preheat oven to 350 degrees F. Mix wet ingredients together, including bananas and almond butter. Add remaining ingredients and mix well. Add fruit or other fillings as desired. Spoon into greased muffin pan and bake for about 25-30 minutes (55-65 minutes for a loaf). Makes 12 muffins. When cooking with coconut flour, you need more eggs. Coconut flour is not the same as wheat flour. It is finely ground coconut and far more nutritious. The number of eggs is increased to create a moist and delicious result.
