Pumpkin pie pudding

Left with an abundance of pumpkins from this fall’s harvest, I’ve been dreaming up ways to enjoy this heart-healthy functional food, and a wholesome pumpkin pudding hit the spot.
Pumpkin is good medicine – in fact, considered a nutraceutical, known for its anti-inflammatory, anti-cancer, antiviral and antioxidant properties, according to a 2022 scientific review in the journal Plants. Pumpkin pulp, usually tossed in the composter, is brimming with phytosterols and phytonutrients. As an addition to a creamy soup, it’s nutritarian’s dream.
One cup of pumpkin puree packs a huge nutritional punch, providing a healthy dose of vitamin A, beta carotene, vitamin C, magnesium, phosphorus and other minerals, along with calcium, fibre, iron and protein.
When you factor nutrition, this wholesome vegan pudding is more akin to a breakfast than a dessert.
Pumpkin pie pudding
- 1 cup of pumpkin puree*
- ¾ cup dates, chopped
- ½ tsp cinnamon
- 1/4 tsp nutmeg and ginger
- Dash of ground cloves
- About 2 tbsp water
*Make your own puree by cutting up the flesh of a pumpkin, steaming until cooked, then pureeing it in a blender or food processor.
Puree chopped dates in food processor or blender, into a paste. Add pumpkin puree, water and spices. Blend till creamy. Store covered in refrigerator.
Add chopped nuts or pumpkin seeds.
Add a dollop of coconut cream on top or even in between to create a parfait.
Make your own coconut cream
Chill a can of full fat coconut milk in refrigerator overnight.
Drain the coconut water out of the chilled milk (save the water for a smoothie), the scoop the solidified coconut milk into a bowl. Beat on high speed with a mixer until light and fluffy. Add vanilla extract if desired. Add to pudding, or use as an alternative for whip cream on cakes, pies, etc.
