Flavourful veggie loaf

The recipe is packed with flavor and is a very hearty dish that will go the mile at a potluck. It can also serve as a healthy stuffing alternative during the holiday season.
- ½ cup pumpkin seeds, ground
- ½ cup sunflower seeds, ground
- ½ cup spelt flour
- ½ cup nutritional yeast
- 1 tsp each basil, cumin, and savoury
- ½ tsp salt and sage
- ¼ cup water
- 3 garlic cloves, minced
- 1 cup onion, finely chopped
- 3 tbsp tamari
- 2 tbsp fresh parsley
- 1 cup raw potatoes, grated
- 1/3 cup olive oil
Preheat oven to 350 degrees F. Lightly sauté chopped onions and minced garlic in a tbsp of olive oil. Mix all the dry ingredients together in a bowl. Mix the wet ingredients together and add to the dry mixture, along with the sautéed onions, garlic and chopped parsley. Combine, and then stir in the grated potato and olive oil. Grease a bread pan and pour mixture into it. Bake for about 50 minutes. Cool slightly before serving.
