Butterless Butter Tarts
- 1/2 cup raisins
- 1/4 cup coconut oil
- 1/4 cup coconut sugar
- 1/2 cup agave nectar
- 1 egg
- 1 tsp vanilla
Soak raisins in bowl of water for 20 minutes then drain. Blend soft coconut oil with coconut sugar. Add rest of ingredients (add raisins last). Set aside.
Spelt Flour Pie Crust (Makes 30 butter tarts)
- 2 cups spelt flour
- 1/2 tsp salt
- 3/4 cup cold butter
- 4 tbsp cold water
Blend flour and salt and cut butter into mixture till crumbly. Add water and mix well to form a dough. Cut into circles and line muffin tin cups with pie crust for butter tarts. Bake butter tarts at 400 degrees F for about 15 minutes.
