Vegan Chili

  • 2 tbsp olive oil
  • 3 cloves garlic
  • 1 large onion
  • 1 red or green pepper, diced
  • 2 large cans diced tomatoes
  • 2 stalks celery, diced
  • 1 cup black beans
  • 1 cup kidney beans
  • 1 tbsp cumin
  • 3 tbsp chili powder
  • jalapeno pepper (optional)

Instructions: Saute onions, garlic and spices in olive oil in large pot over low to medium heat. Add remaining ingredients and mix well. Bring to boil, then simmer for about 20 minutes. Serve with non GMO organic tortilla chips or crackers.]]>
