Sweet Potato Cookies
- 1½ cups organic oat flour or oats ground in a food processor
- 4 tbsp reserved cooking water (may need a little more)
- 1 large sweet potato
- pinch of oregano
- dash of turmeric
Steam and mash the sweet potato. Add the other ingredients to the mashed sweet potato and mix well. If your mixture feels dry, add a little more reserved cooking liquid. Roll out the dough and cut into fun shapes.
Bake at 350 degrees F for 10 to 15 minutes. Best stored in the freezer in an airtight container as they keep longer and are a cool treat for sore gums.
