Simple superfood turnip salad

This recipe is a seriously simple way to create a salad that provides a healthy dose of antioxidants, vitamins and minerals to boost the body.

Turnips, though often overlooked as a superfood, are rich in the antioxidant lutein, which has been found to help prevent age-related macular degeneration and improve eye sight, according to the National Institutes of Health. Not to mention calcium-rich turnips are good bone boosters.

Simple turnip and carrot salad

  • 1 large turnip, peeled
  • 1 large carrot
  • Handful of parsley
  • Olive oil
  • Fresh lemon juice
  • Salt and pepper
  • Handful of sunflower seeds (optional as a topping)

Grate peeled turnip and carrot, or use a spiralize or a peeler to create ribbons with the turnip and the carrot. Toss into a bowl. Chop up parsley into small pieces and add to bowl. Mix well. Pour about 2 tbsp of olive oil over the veggies. Squeeze the juice of a lemon into the salad. Toss well to meld the flavours together. Sprinkle with sea salt and pepper. Will store in fridge for up to five days.
