Mini Muffins

  • 1 1/4 cups oat flour or oatmeal ground into flour
  • 1/4 cup maple syrup
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk of choice
  • 2 tbsp coconut oil
  • 1 tsp vanilla extract
  • 1 tbsp chia seeds
  • 1 cup blueberries, cranberries, grated carrots/zucchini
  • 1 tsp cinnamon, nutmeg or lemon rind

Mix together all ingredients. Bake in 350 degrees F oven for 20 minutes. Makes 12 mini muffins.
