Mini Muffins
- 1 1/4 cups oat flour or oatmeal ground into flour
- 1/4 cup maple syrup
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk of choice
- 2 tbsp coconut oil
- 1 tsp vanilla extract
- 1 tbsp chia seeds
- 1 cup blueberries, cranberries, grated carrots/zucchini
- 1 tsp cinnamon, nutmeg or lemon rind
Mix together all ingredients. Bake in 350 degrees F oven for 20 minutes. Makes 12 mini muffins.
