Lemon poppy seed super salad

This salad offers up a great way to use up those leftover broccoli stalks, and combines the nutritious goodness of kale and Brussels sprouts, and just enough sweetness to allow all the flavours to meld together for a perfect wholesome salad.

Lemon poppy seed super salad

Salad ingredients

  • 1 cup kale leaves, chopped
  • 1 cup grated broccoli stems
  • 1 cup grated cabbage
  • 1 cup grated Brussels sprouts
  • Optional: pumpkin seeds and dried cranberries as a salad topper added before serving.

Lemon poppy seed dressing

  • Juice of one orange (or about 1/8 cup orange juice)
  • ¼ cup lemon juice
  • ¼ cup olive oil
  • 2 tbsp honey or maple syrup
  • 2 tsp Dijon mustard
  • 1 tbsp dehydrated onion (optional)
  • ½ tsp salt
  • 2 tbsp poppy seeds

Add all ingredients into a jar and shake. Store in fridge.
