Lazy days detox salad

I consider this salad a lazy day salad because I can eat leftovers of it for five days and feel fabulous. Who doesn’t feel fabulous when they are eating raw and real food? This salad also goes over well at summer gatherings. Adding quinoa to it turns it into a complete protein meal.

Lazy days detox salad

  • 2 cups broccoli crowns
  • 2 cups cauliflower crowns
  • 1 cup carrots, shredded
  • Up to ½ cup parsley, chopped
  • ½ cup fresh or dried berries (blueberries, black currants, blackberries)
  • 3/4 cup raw sunflower seeds
  • ½ cup raw pumpkin seeds
  • 1 cup quinoa (optional)
  • 1/3 cup lemon juice
  • 2-3 tbsp raw honey
  • Salt and pepper to taste

Combine 1 cup quinoa with 1 ¾ cups of water in a pot. Bring to a boil, cover and simmer for 15 to 20 minutes, until all water is absorbed. Fluff with a fork and remove from heat. Set in fridge to cool.

Pulse broccoli, cauliflower and carrots individually in a food processor to a crumble, or chop into fine pieces by hand. Add to a large bowl. Mix well. Add chopped parsley and quinoa (if using). Combine raw honey and lemon juice and pour over salad. Mix well. Add sunflower and pumpkin seeds and berries, and salt and pepper to taste. Store covered in fridge for up to five days.
