Grain-free, fibre-rich energy bars

I call these chocolate-free treats “prana,” life force energy bars, and for good reason. They are packed with all things wholesome and good for you, including plenty of fibre from the carob powder and the flax seeds and healthy fats. Using carob powder instead of cocoa keeps them caffeine free.
These treats are reminiscent of the classic Eat More chocolate bar, minus the modified, artificial, chemical ingredients.
Life force energy bars
- ½ cup sunflower seeds
- ½ cup sesame seeds
- 1/3 cup honey
- ½ cup plus 2 tbsp nut butter* (almond butter, peanut butter, etc.)
- ½ cup unsweetened carob powder
- ¼ cup pumpkin seeds
- ¼ cup unsweetened coconut
- 1/8 cup ground flax
Blend all ingredients in food processor. It should hold its form when rolled into a ball. Add extra nut butter if it seems dry. Press into a 8X8-inch parchment paper-covered glass pan and place in fridge for at least 30 minutes before slicing. To slice, lift the parchment paper onto a board, and cut into small squares.
*Use sunflower seed butter for a nut-free version.
