Energy lover’s breakfast

By Sari Huhtala

This super easy, superfood breakfast bowl combines the protein power of nut butters in a delicious sauce, drizzled on top of antioxidant-packed berries and fruits. Sprinkle on a few superfoods and you have the perfect breakfast to power up your prana!

Over 20 years ago when I started my day with a bowl of Special K, and milk, of all things, I was nothing but a zombie by 2 p.m. I even had to buy a futon for my office. My boss thought I was joking, but when the furniture delivery guy came up the stairs, on the heels of the pizza delivery guy, and said, “Anyone order a futon?” my boss started to take the napnomics newsletter I created for the company, promoting the benefits of napping, more seriously. I laugh now at my ignorance. I even went to the doctor once complaining of chronic low energy, and she didn’t even ask what on earth I was eating for breakfast.

If you are what you eat, then wouldn’t your rather be a firecracker of energy rather than someone dragging your feet under the influence of wheat? Or sugar?

This breakfast idea is super easy.

Slice up your favourite fruit into a bowl. Mango, papaya, banana, strawberries and all berries, make a great combo.

Toss about 2 tbsp of coconut water, 2 tbsp of nut butter (almond is fabulous, but any nut or seed butter is great), a drizzle of raw honey, and ½-1 tsp of spirulina or chlorella powder in a blender. If you don’t have either of those powders, it’s ok. Spirulina and chlorella are super good for you, and help to get the nasty heavy metals out of your system, but you can still create this sauce without them. They are just added goodness.

Blend well. If it’s too thick, add a touch more coconut water, or too thin, add more nut butter. Pour over your fruit bowl. Sprinkle a couple of tablespoons of hemp hearts on top, and maybe some goji berries, even adds some nuts, sunflower or pumpkin seeds and you’re all set.

I like to sprinkle some bee pollen on top for an added health boost. Anything goes, as long as it’s sans wheat and sugar!
