Dreamy chocolate avocado truffles

Yes, you read correct. Chocolate truffles made with avocado. You need to try this to believe it!
Makes 24 truffles
- 2 ripe avocados
- 10 ounces of dark chocolate chips (at least 70%)
- 4 tablespoons of coconut sugar
- 2 tsp of vanilla extract
- 5 tablespoons of unsweetened cocoa powder
- 1/4 teaspoon of sea salt
Pit avocado and mash or use an immersion blender to make really smooth.
Melt chocolate on medium heat. Add in avocado, coconut sugar, cocoa powder, vanilla and sea salt. Put truffle mixture in the fridge for 45 minutes to allow to set. Remove and form balls, then roll in leftover cocoa powder. Optional: roll truffles in shredded coconut, crushed pecans or crushed pistachios.
Eat Immediately. Gluten free, dairy free, decadent!
