Trail mix balls

By Sari Huhtala

These yummy trail mix balls take only a few minutes to make and offer a great alternative to store-bought granola bars when heading out for a hike or when you need a quick pick-me-up during an afternoon energy slump at the office.

Trail mix balls

  • ½ cup shredded coconut
  • ¼ cup sunflower seeds, walnuts, raisins and pumpkin seeds
  • 1 cup oats
  • ¾ cup peanut butter
  • ¼ cup raw honey or maple syrup

Place all dry ingredients, except for raisins, in a food processor. Process to a crumble. Add peanut butter and maple syrup. Blend to combine. Add the raisins and blend just to mix. Roll into one-inch balls. Store in an air tight container in fridge or in freezer for longer-term storage.
