Homemade healthy klondike bar bites

I created this frozen treat one day, after making healthy chocolate bars and wondering what to do with the leftover chocolate dip I had created. Although I used a real, vanilla ice cream, not the modified milk junk that has 12 ingredients, I also tried it out with my homemade ice cream. My homemade ice cream is creamier, so a little more challenging to work with, but works as well. It’s become my grandson’s favourite summer treat!
Homemade ice cream bar bites
- 3 tbsp coconut oil
- 2-3 tbsp cocoa powder
- 1 tbsp raw honey
- 1-2 tbsp dark chocolate (optional, but it helps prevent the chocolate coating from melting immediately in your hand because of the cocoa butter content)
- Vanilla ice cream or homemade vanilla ice cream
(Homemade vanilla ice cream can be made by combining 2 cups of frozen bananas with 1 tsp pure vanilla extract, and blending it in a high-speed blender or food processor until creamy).
I use a melon baller to create small ice cream balls.
Heat the coconut oil in a small pot on the stove. Add the dark chocolate, if using, and melt on low heat. Remove from heat. Add cocoa powder and raw honey, and mix well. Cool slightly in fridge or on counter to allow the chocolate sauce to thicken. Coconut oil will begin to solidify as it cools. Cool just enough to create a consistency that will allow you to dunk the ice cream balls into the sauce. If the sauce is slightly warm it will immediately harden on the ice cream balls. Line a small pan or plate with parchment paper. Use a melon baller to scoop out the ice cream, then drop into the sauce, and scoop out with a spoon, placing the ice cream balls onto the parchment paper. Place in freezer until ready to eat.
