Chocolate bars…for breakfast?

By Sari Huhtala

Craving sweets? Think easy, real easy. This crazy easy idea for fudge-filled chocolate bars will leave you wanting more after each bite. And the good news is they are healthy, real healthy.

In fact, so healthy your kids can indulge in these fudgy chocolate bars for breakfast, and so can you.

All you need is:

  • 6 Medjool dates (you can use regular dates but they are much smaller)
  • 3 tbsp coconut oil
  • 2 tbsp cocoa powder (or use any combination of cocoa powder, raw cacao powder or carob powder)
  • 1 tbsp maple syrup or raw honey (or to taste)

Carefully remove pits from the dates. Melt 3 tbsp coconut oil (I like to use a little oven-proof dish that I place in a toaster oven). Add cocoa powder and maple syrup. Mix well.

Hold one Medjool date upright and fill the centre with melted coconut oil/chocolate mixture. Place upright in dish with an edge. Repeat with remaining dates. Place in fridge for about 20 minutes to allow centre to harden. Once chocolate fudge centres are firm roll each date individually in remaining melted chocolate and lay onto a plate. Place in fridge to set. Store covered in fridge.

Tip: To boost the nutritional quality of these powerful bites, just add hemp seeds or chia seeds to the melted coconut oil/chocolate mixture.
