Chia seed breakfast parfait

By Sari Huhtala

This breakfast idea doubles as a guilt-free dessert. It’s made with only four simple ingredients, including fibre-rich chia seeds, which is a nutritional powerhouse, with a serving of brain-boosting healthy fats. The richness of the coconut milk keeps you satiated for a few hours.

Chia seed parfait (makes 6 small servings or 3 )

  • 1 can full fat, quality coconut milk (check ingredients to avoid a lot of extra fillers. There’s a reason one coconut milk costs $1.50 and another $3)
  • About 4-5 tablespoons chia seeds (some brands are thicker and require less chia seeds)
  • 1 tsp vanilla extract
  • Honey to taste (start with 1 tsp and adjust accordingly)
  • Fruit or choice

Pour can of coconut milk into a bowl and stir well. Add chia seeds, vanilla and honey and stir. Set aside in the fridge for at least 1 hour to thicken. Spoon into a bowl and top with fruit, nuts, sunflower seeds, hemp seeds or other toppings to add more protein for a complete breakfast. To create a parfait, simply layer the chia seed pudding with fruit.

Store covered in refrigerator for up to four days.
