Super simple, super good vegan Caesar salad dressing

Looking for an alternative to the genetically-modified canola oil-based Caesar salad dressings that claim to be healthier choices? This vegan Caesar dressing is not only made with simple and super nutritious ingredients, it’s so delicious that even those who won’t stray from their usual Kraft dressing may be just be persuaded to live adventurously.
Plus, kids and toddlers will love it too, as long as you don’t go overboard with the garlic. And, you’ll love the fact it stores for about three weeks in the refrigerator for an easy go-to dressing, and it’ll only take you about three minutes to make it.
A fabulous twist to a Caesar salad is the addition of avocado chunks and chickpea croutons.
Vegan Caesar salad dressing
- 8 tbsp ground raw almonds (grind whole almonds or slivered almonds or use almond meal)
- 6 tbsp lemon juice *
- 6 tbsp olive oil
- 4 tbsp tamari or natural soy sauce, or Bragg’s Liquid Soy
- 1 tbsp Dijon mustard
- 2 tbsp tahini **
- 2 garlic cloves (add more for extra garlicky flavour)
Toss all ingredients in a blender or a Magic Bullet and blend till smooth. If using whole almonds, grind them into a meal before adding the rest of the ingredients. Pour into a jar and seal. Refrigerate for up to three weeks. If the dressing thickens too much after refrigeration then thin out slightly with olive oil with each use. * Save time and money by using bottled organic lemon juice instead of squeezing fresh lemons for juice. ** The recipe also works well without tahini, but tahini adds extra nutrition and enhances flavour.
