Ridiculously Easy Breakfast Fudge

I couldn’t have imagined handing the kids a chunk of fudge at breakfast years ago, but this fudge has all the makings of a brain-food breakfast, and your kids will love it.

It’s made with only four super ingredients: coconut oil for a healthy, happy brain; organic peanut butter for a protein kick; cocoa for an ounce of antioxidants and immune boosting; and a touch of maple syrup for added minerals and nutrients.

You can add other superfoods in there, like walnuts, hemp seeds, etc. to pump up nutrient density.

It takes only seconds to mix a batch. Serve it up with plenty of fresh fruit in the morning for perfect breakfast combo.

½ cup smooth organic peanut butter

¼ cup coconut oil (not melted)

3 tbsp cocoa powder or raw cacao (very high in antioxidants)

3-4 tbsp pure maple syrup or raw honey

Optional: add hemp seeds, pumpkin seeds, walnuts, raisins as desired.

Blend peanut butter and coconut oil until smooth. Stir in cocoa powder and maple syrup and mix well. Spread out to one-inch thickness on a small parchment-paper lined plate or baking dish. Place in fridge to set for about one hour. Cut into one-inch squares. Store covered in fridge.]]>
