Cauliflower rice stir fry

This quick and easy grain-free dinner can be tossed together in a matter of minutes, and can be easily adapted to your own tastebuds using your own favourite fried “rice” special sauce or seasonings. Since it’s grain free, it’s perfect for those following a keto lifestyle.

  • 1 small head of cauliflower florets
  • Veggies for stir frying (mushrooms, peppers, beans, peas, carrots, celery, cabbage or any favourites)
  • 1 cup cooked blackbeans, lentils or protein source like edamame
  • 1 large onion, chopped
  • 3-5 cloves garlic, minced
  • 3-4 tbsp tamari, or organic soy sauce
  • Olive, coconut or avocado oil for frying

Cut cauliflower florets into 1-inch pieces and toss into a food processor. Process until it looks like rice.

In a frying pan heat olive oil on medium low, then add onions, garlic, mushrooms and your favourite veggies. Cook until almost ready, then toss in cauliflower rice and beans and cook another five to 10 minutes.

Drizzle tamari or Braggs liquid soy over “rice” and serve, or add your own favourite fried rice seasonings.
