Brownies for breakfast?

These rich, fudgy delights will have you accumulating a lot of brownie points, especially because, unlike a conventional brownie, these gluten-free goodies won’t rob you of afternoon energy, even when eaten as a morning treat.

When you graduate to eat fibre-rich black beans brownies for breakfast you will know you have mastered the art of sneaky nutrition.   

Nutritionally, these brownies stack up against breakfast waffles, or cereal, any old day, and you wouldn’t even guess its base is black beans.

Black bean brownies

  • 2 ¼ cups of cooked black beans (drained and rinsed if using canned)
  • 1/3 cup coconut oil, melted
  • 1/2 cup coconut sugar
  • 1/4 cup cocoa
  • 2 large eggs

Preheat oven to 350 degrees F. Place all ingredients in a food processor and blend until smooth, making sure all beans are pureed completely. Add Enjoy Life chocolate chips and chopped walnuts if desired, and pour into an 8X8-inch pan that has been greased with coconut oil. Bake approximately 30 minutes, or until a toothpick inserted in centre comes out clean. Cool, then cut into squares.

Alternatively, these brownies can be baked in mini muffin cups to create a one-bite brownie.
